As we are well in Spring, we will see soon some red spots in gardens: strawberry season will begin.
I do love strawberries for their multiple benefits: they are an excellent source of vitamins C and K as well as providing folic acid, manganese and potassium. They also contain significant amounts of phytonutrients and flavonoids, flavanoids are known as vitamin P and are antioxidants… It seems that strawberries protect us against many diseases including Alzheimer, cancer, diabetes, cardiovascular diseases and inflammations. I like to eat them on their own or in dessert, but I also like to include them in savoury dishes. Here’s a recipe of a delicious salad which includes them.
I love the combination of the colours and textures of this salad. The strawberries have a sweet taste, but also a very smooth texture. It contrasts well with the spicy side of the arugula and the crispiness of the green leaves. The pecan nuts are an excellent source of healthy fats and I have caramelized them to support the sweet side of the strawberries and add a stronger crispy touch. The seasoning is made with orange juice to go along with the strawberries and soften the arugula.
To make this salad for three people, you will need:
- 1 green salad
- 50 grams arugula
- 120 grams strawberries
- 75 grams pecan nuts
- 5 table spoon sugar (non refined sugar, such as raw sugar cane)
- 1 orange (5 table spoon orange juice)
- 1 tablespoon olive oil
- 1 table spoon vinegar
- 1 pinch of salt
Wash carefully the green salad and the arugula, spin and cut the leaves into smaller pieces. Wash the strawberries and let them dry. Then slice them. Put a small pan on low to medium it with the pecan nuts. Once they start roasting, add the sugar and ensure all the nuts are well coated with the caramel that just formed. Put aside and let them cool. Meanwhile, prepare the seasoning by mixing the orange juice, olive oil, vinegar, salt, pepper and mustard. Give it a try and accommodate to your taste. Arrange the greens leaves in a dish, add then the strawberries and the caramelized pecan nuts. Pour the seasoning over the mix. I hope you will have as much fun savoring it as I had creating it.
