Just about six months ago, 42 degres -a rawfood restaurant- opened in Paris. I was excited to visit it, to speak with Emilia, the owner and to taste her healthy cuisine.
Located at the metro station …. It was very easy to get there. From the outside the restaurant looked very sober. One large room 8x4meters with morroccan stones, tables to sit with two or four people. A small window and a coffee machine separated the kitchen from the dining room.
Let’s sit and have something! I ordered sushi made from parsnip, avocado and mango with homemade horseradish dip. Nice!! Served on a long board like in a Japanese restaurant – it looked very appealing.
I skipped the main menu, I wasn’t hungry for a bigger meal. But when I looked at my neighbors plate I saw some beautiful mushroom burger or raw lasagna. However I went on with the dessert. I didn’t want to skip that 😉
MOUSSE AU CHOCOLAT – finally in Paris. We use this word a lot in the Netherlands 😉 I tasted avocado, carob, cacao, agave.. Some lemon zest brought it in balance to the lighter site of pleasure. Very good! To present this dish can be kind of difficult. However, it was saying “eat me, eat me!”. “Of course I will eat you”, but it could feel strange to people who don’t know how gorgeous raw chocolate mousse can taste.
After my food pleasures I talked to Emilia. She and her business partner Fabien were working almost a year to be right here in the middle of their restaurant. I am fascinated by their colorful past. Emilia worked as an engineer and right now she follows a fruit based diet. Her biggest inspiration comes from the DEROSE method which is a physical practice to optimize personal and professional life. Fabien eats everything and worked as a chef in a French food restaurant. He loved the idea of a raw food restaurant and together they went on.
Open from 12:00 – 22:30 o’clock, their restaurant serves a seasonal day menu which changes 4x a year: spring, summer, autumn, winter. Their visitors are mainly people who like to have a fresh break, who try something new, like to fast one day from daily habits.
During my visit I realised that 42degres is not a health mecca. It’s a brilliant restaurant who serves its customers a raw plant cuisine simply by eating out in a well known Paris small tabled atmosphere. You finish your stay with coffee – voila!
Emilia’s biggest intention is to bring (food) CHOICE to Paris. She likes to live and work as an example for enjoying a vegan lifestyle. From her point of view it is difficult to change or complement the french “baguette avec fromage” tradition. And to be honest, yes, I saw baguette and cheese stores all along when I strolled through the streets of Paris.
I ask for the difficulties she experiences in her business: “nothing!” Good to hear, for Emilia it flows and the plan is to open another restaurant in one more year.
