Hello everybody! So here I am with my first post on Orla Collective.
I’m very happy to be part of this project and I’d like to share with you a recipe for something sweet (but guilt free!!!) and easy to make.
This berry chia and ginger jam is not only good on your breakfast toast, on top of your porridge, in smoothies or just straight from the jar; It’s also very good for you as it’s full of chia seeds which is an amazing super food. Chia is one of my favorite super foods, well after raw cacao of course!!!
The benefit of these tiny seeds are countless. They are full of omega 3 fatty acid, they are antioxidant, they contain fibers and minrals such as calcium and phosphorus. They give you good energy and many more good things. The ancient Atzec and Maya knew it a long time ago...
You can check the benefits of chia seeds here.
Back to our recipe now!
I usually make this jam in small batches: it’s very easy and fast to prepare so you can always have it fresh.
Ingredients:
- 2 cups mixed berries fresh or frozen
- 2 tablespoons maple syrup or honey
- 2 tablespoons chia seeds
- A piece of fresh ginger
- A pinch of pink himalayan salt
Method:
Put the berries, the ginger and the salt in a small saucepan ( if using fresh berries you might need a little bit of water).
Bring it to a boil, lower the heat and let it simmer for about 10 minutes. Mash the berries using a potato masher or a fork.
Add the sweetener of your choice and chia seeds.
Let simmer for 5 more minutes, stirring often to prevent sticking.
Turn the heat off and let the jam cool down.
When at room temperature discard the piece of ginger and pour the jam into a jar.
Keep refrigerated.
Note:honey is not vegan so if you want to keep this recipe 100% vegan use maple or rice malt.
