It’s simple, it’s delicious, and it’s gluten-free, its basic ingredient being millet.
It is just pure goodness!
For 3-4 portions you will need:
– one cup of millet, well-rinsed in hot water
– about 1 cup of coconut milk
– 3 cups of water
– optional: 1 ripe banana
– some kind of sweetener: honey, agave syrup, maple syrup – to taste
– a pinch of real vanilla, and you can of course experiment with other spices
– 1 passionfruit
Cook millet with coconut milk and water until it’s really well done and soft. Don’t forget to stir regularly! If needed, add more water when the millet is boiling and remember that your goal is smooth and creamy texture. When the millet is ready and a bit cooled add the sweetener, banana, vanilla and possibly other spices. Puree everything using a blender or a food processor. If the mixture is too thick to your linking, you can add some extra coconut milk.
Cut the passionfruit in half, scoop what’s inside with a spoon – this is will be your lovely and yummy sauce.
