A ripe tomato is simple summer food at its best! When I saw those totally flavorful tomatoes at the market a week ago, I just had to create a new seasonal recipe with tomatoes as star ingredient. Simply combine heirloom tomatoes with fresh rucola, savory feta cheese and healthy olives. Roasted pumpkin seeds provide the extra crunch. As with any dish containing just a few ingredients, you should get the best quality products available!
Summer salad (serves 3-4):
100g rucola
150g feta cheese
150g olives
3 tbsp pumpkin seeds
small handful of fresh basil leaves
2 tbsp cold-pressed olive oil
1 tbsp maple syrup
1 tbsp white wine vinegar
Oven-roasted tomatoes:
500g heirloom tomatoes (or cherry tomatoes)
1 tbsp of melted ghee
some sage, thyme or rosemary
Put the tomatoes in an ovenproof dish and cover with melted ghee. Add herbs and roast at 200°C for about 20 minutes. When ready, mix rucola, cheese and olives with olive oil, maple syrup and vinegar. Add tomatoes and decorate with pumpkin seeds and basil leaves. Serve with a slice of crispy baguette or ciabatta bread.
