As we love celebrating christmas, we spend the most of our December time creating new christmas cookies with some seasonal and festive flavours!
Of course we always try as much as possible to bake a healthier version of cookies from sugar-free, to vegan.
This recipe has all the flavours you may crave for Christmas: the cranberries, the spices, the nuts and even the eggnog which is an original ingredient to use in biscuits! It is the perfect gift to offer to your family for the holiday season and a perfect treat in front of an open wood fire and great cup of christmas tea during the cold weather!

INGREDIENTS
Dry:
- 3/4 cup chopped toasted almonds
- 1 cup whole wheat flour
- 1 cup unbleached all-purpose flour
- 1 tbs baking powder
- 1/4 tsp baking soda
- 3/4 cup cane sugar
- 2 tbs ground nutmeg
- 2 tbs ground cinnamon
- a pinch of salt
- 1/2 cup dried cranberries
Wet:
- 1/4 cup melted coconut oil
- 1/2 cup eggnog
- 1 vanilla bean
Eggnog Glaze:
- 1 cup confectioner’s sugar
- 4 tbs eggnog (for a vegan version, just use a vegan eggnog)
- 1/2 tsp ground cinnamon
DIRECTIONS:
Preheat oven to 180C. Line a large baking sheet with parchment paper.
In a large bowl, mix the dry ingredients. In a smaller bowl mix the wet ingredients then add the wet to dry and mix with a spoon until it starts to come together. Now use your hands to squeeze together the dough and mix it completely.
Divide the dough in half and place on prepared baking sheet. With palm of hand, press down each half to flatten. Place a piece of parchment paper over top of one half and roll it out into a log (approx 10 inches by 5 across and 1/2 inch thick), using your hand to shape as necessary. Repeat with the second log. Then go ahead with the following cutting method:
Step 1: Place your dough between 2 pieces of parchment paper and roll it out with a pastry roller.
Step 2: With a knife gently cut the dough in small bite-sizes biscotti shapes.
Step 3: Flip your biscotti on one side. Bake for 30 mins at 180C then let cool on a baking rack.
Meanwhile, prepare the glaze…whisk all glaze ingredients together in a medium sized bowl. Place glaze into a baggie, snip off the very end, and “pipe” over top.
