Quinoa’s always good for a change, and if you’re lacking inspiration for a quick and healthy full flavored dish, this one’s prefect for you.
Use a cup full of Quinoa and cook it according to package instructions. Stir up a few vegetables, like in this case mushrooms, sweet peppers and an onion in some olive oil, preheated with a lot of garlic and dried thyme. Mix all the ingredients together and add some Parmesan.
