Are you in for something extremely colourful, fresh and yummy? Then try this exotic raw food recipe for zucchini noodles with a tangy and creamy avocado mango sauce. It will dazzle your tastebuds and will give your body a maximum of hydration and plant power!
INGREDIENTS:
- 2-3 zucchini
- 1 ripe avocado
- 1 mango
- Juice of 1 lime
- 2-3 spring onion stalks
- A handful of cilantro
- Chilli flakes (optional)
DIRECTIONS:
- First, make your zucchini noodles. If you’re a pro, use your spiralizer (what the heck is that?) or simply make thin, tagliatelle like stripes using a vegetable peeler.
- Blend your avocado, mango, spring onion, cilantro and lime juice in a high speed blender, watch it turn into a lovely bright dressing. Now you can choose to add your chilli flakes if you like a little spiciness. Use half a teaspoon for a little hint, use a full teaspoon to two if you’re more daring.
- Serve your noodles in a plate, top with dressing. Toss around if you like, and give yourself a visual treat by garnishing with cherry tomatoes and other colourful veggies.Connect with your food not only through eating, but seeing, too.
